Baker's is the second of four super-premium Bourbons released by Jim Beam in the “Small Batch Bourbon Collection.” Made from a 77% Corn, 13% Rye and 10% Malted Barley recipe preferred by Baker Beam, grand nephew of Jim Beam, this whiskey also utilises a special strain of jug yeast contributing a silky texture that remains consistent from batch to batch. Four Roses Single Barrel is aged for at least seven years in a newly charred American white oak barrel. A barrel is selected only when it has developed the spicy character, floral nose and slightly dry delicate finish that is Bourbon at its natural best. Each bottle approximately 248 per barrel, is hand-filled and numbered. The series of numbers on the back label telly you when the whiskey was put in the barrel and the date it was bottled. This assures you of the singular source at the Four Roses Distillery and gives you the opportunity to compare Bourbon from different barrels and years. By its very nature, no two barrels create identical tasting bourbons.

The 15 Year Old's distinctive character is the result of selective maturation; a proportion of the spirit is matured in a selection of French oak casks for a limited period, so as not to overpower the final result. The French oak increases the intensity of the whisky, resulting in a richer and creamier finish.

The finish lingers with more dried fruits (think PX), bitter peel and a late succulence. The wine input is sensitively handled, and at just 40%, the depth of flavour unexpected.
