The essence of Plantation Rum Original Dark is the wealth of its palate and its technique of double aging. Plantation Original Dark comprises the elegant rums of Trinidad which are distilled then aged in their tropical climate in the Caribbean in American oak barrels under high heat before traveling to France. Once in Europe, the House cellar master decides on less "high esters" for the Trinidadian rum and blends in old rums from Jamaica (15 - 20 yrs.) This end result finishes like sweet nectar but also adapts beautifully to classic cocktails made with dark rum such as the Mai Tai or Daiquiri.
A dry, spicy Louisiana rum from Bayou, matured in ex-bourbon and ex-rye whiskey casks using a solera system.
Matured in rye barrels for 2.5 years for a more spicy, dry and complex flavour profile.
Hints of smoked oak with bursts of pepper and tropical fruits on the nose and Complex palate of spice, oak, honey, pineapple and creamy banana
THE SOLERA AGING METHOD
As we built our Solera aging system, our barrels were tipped on their sides, filled with Bayou Rum, and then vertically stacked into a pyramid. The oldest rum barrels ended up right “on the ground” which is the meaning of “solera” in Spanish. When we harvest for a batch, the bottom barrel is tapped for part of its content to be bottled. Then that bottom barrel is topped off from the next oldest barrel above it, which is filled from the next oldest, and so on until we refill the top barrel with new rum to mingle with older aged rum. For the next aging interval it happens all over again. The benefit is a natural blending process for consistent taste and quality which gets better each time we harvest a batch. The result is delicious Bayou Reserve Rum.
HOW OUR RUM IS MADE
Bayou Rum is distilled from locally grown sugarcane in southern Louisiana, USA. Our molasses comes from the oldest family-owned and operated sugar mill in the United States. Every batch of Bayou Rum is distilled in copper pot stills, aged mostly in Bourbon casks under a solera system and bottled in house.

Aromas of zesty orange, dark chocolate and coffee, with a velvet mouth feel of coconut and spiced oak followed by a lingering fresh flavour. Aged for a minimum of 8 years in charred ex bourbon American oak casks and finished with mocha oak chips. ABV: 35%
